Mamo Hospitality is exciting to us because it is the beginning of a lifelong dream, and a chance for us to put years worth of experience to use doing what we love on our own terms. We are different because we believe in educating our clients about the bounty of the Midwest and the tradition of our West Michigan communities through cuisine and hospitality. We work directly with guests to create hyper customized menus using locally sourced ingredients. Our passion is American Food, and to us that means everything from Grandma Palofksi’s Chicken to Mike’s BBQ Broccoli Stems. America is made of everyone from everywhere, so we should celebrate the culture and food accordingly. We like to say we are in the business of serving hospitality with a side of excellent food. No matter where we are serving you, we want our guests to feel welcome and involved in the dining experience as if they are at home and dining at our table.

Impact

Most directly we will benefit our clients, providing a delicious and educational experience.  Surrounding that we will be impacting local purveyors and producers by purchasing, using and advertising their products. The more we grow, the more we are able to directly impact and support our community. Chef Michael has the food knowledge to take local produce and make thoughtful elegant meals, and Summer is a certified sommelier with a passion for pairing Michigan wines with Michigan made meals.

What I Will Do With $5,000

With the $5,000 we will rent space in a commercial kitchen to produce food on a larger scale. The extra space will give us the storage capacity to buy product in bulk and cut costs so we can keep competitive pricing. Currently cooking in a small kitchen limits our prep ability and volume of cooking, so in order to grow our business, we need to move into a larger space.

About Summer Knoop

About Us! I am from Michigan originally but moved NYC to study wine full time to begin a career as a Sommelier with a Michelin Starred Restaurant in Manhattan. Mike and I recently moved back to start our dream of owning a business. Michael is from Montana, thats why everyone calls him Montana Mike. He has been cooking since a very young age, first with his mother and family, then professionally. Working through classic French Bistros, all the way to a New Nordic tasting menu in Brooklyn.
